Planning. Osmosis is the diffusion of water molecules across a semi-permeable membrane. Diffusion is the movement of molecules from an area of high concentration, to an area of low concentration. So, Osmosis is the movement of water molecules from an area where there are lots of water molecules to an area where there are few water molecules. As a direct result of this movement of particles, the potato's weight should decrease more the higher the concentration in salt. Therefore, the point at where there is no weight change (in between increasing and decreasing), this should roughly be the average percentage concentration of salt in each piece of potato.
